Horchata. One can get it at all supermarkets in Spain. Since the nuts came from that region it is more common in the bars and probably homemade as well... 👍

I've been chasing horchata for ever. Heard about it many years ago but I never found a cafe or bar that sold it. So now I'm told you can get it at all the supermarkets in Spain! I'm a duffer.

The stuff in supermarkets comes in tins! Bah! If I remember rightly, from years back there were some dedicated cafes in Pamplona.

A Bucks Fizz with Vodka and Gin?
It's been variously claimed that Constante Gil invented Agua de Valencia to use up a surplus of oranges in the Cafe de Madrid caused by a double order or that he was bored with drinking Agua de Bilbao (Cava).

The strict recipe is a cracker:
25 cl of orange juice
70 cl of cava or champagne
2.5 cl of gin
2.5ml vodka
1 spoon of sugar

I'll try this tipple a bit later since we live amidst champagne vineyards; however champagne plus gin plus vodka does seem a bit over the top!

My favorite drinks in spain are agua del pozo, café con leche, calimocho and orujo hjerbas.

Can you describe those, besides the coffee?
Well water, Coca-Cola and red wine (often young and unoaked). Orujo is an eau de vi, similar to grappa. Orujo de hierbas is sweetened and ameliorated with some water and has herbs added; a wonderful digestif.

Now instead of my normal state of 'simply confused,' I am 'really confused.' Not only did I have to look up the word 'duffer,' I am bewildered about horchata. I live in the southwestern part of the US, and here horchata is a drink made from rice, not this tiger nut tuber! I suppose folks had to get creative when they couldn't find chufas here.
Now to get back to Spain and taste this stuff.

I thought that there was a rice and almonds version of Mexican origin, but wikipedia set me straight, but it turns out that there is a “horchata de almendra” that comes from Spain.


There are also horchatas made of rice, sometimes with almonds, but these seem to be more in Latin America than Spain.

A bit of culinary history searching revealed that though the horchata de chufa may be accepted as the most authentic, there are records of an almond horchata that predate it. The first known recipe, from 1748, was made of almonds, melon seeds and pine nuts. The first mention of the tiger nut/chufa variety is from 1762 and was presented as a less expensive option.


Kind of like the debate over whether the authentic tortilla española has onions, or whether the Portugues pastel de nata should be served warm or at room temperature.

Never drink it at room temperature, always over ice.

Not always. Many prefer it slightly chilled with no ice. I prefer a cube or two, in some bars over the decades I’ve received the side eye by mere mention of ice. To each their own
