I was wondering if you could please take a look at my packing list and see if I'm missing anything
I will be starting on the 6th of july

I'd be inclined to ditch the Crop Tops what you wear during the day should suffice. I notice that you haven't added rain pants, being July you may very well get away without needing them, but they're nice when it rains.
Out of interest how much does it all weigh with the backpack?

Looks great! I would only add a 'spork' for on-the-road yogurt, some light-weight flip flops for the shower, a European compatible converter/adaptor for your electronics and of course, don't forget your rock for Cruz de Ferro! One thing I wished I would have taken was a journal so that I could make entries each evening. Instead I did it on my tablet, but there's something therapeutic about putting pen to paper, the old fashioned way.

A large light weight cotton scarf has multiple uses: warmth, padding under pack on back or under arm straps, picnic blanket, buff, something to sit/lie on, use in lieu of poncho/rain jacket in a hot, light rain, carry stuff in it (groceries/laundry), looks nice in the evening, and most importantly it can be used as SHADE as you are walking. Not a lot of shade out here - I have been very grateful for the thin layer of protection my scarf has provided by preventing the painful rays of the sun from burning my skin.

And one other thing, I packed two emergency Power Bars before we left home. They ended up being our "Father's Day" picnic (on the scarf:) ) lunch because I did not realize there would be no place to get food between Foncebadon and Acebo (a very long difficult and hot walk). Thankfully, there was a fountain midway. So always pack a little food before you set off.
 
I would trade out the crop tops for 1 long sleeve, super light weight, SUV treated, fishing shirt. It will keep the sun off and allow good air flow.

Sheesh! You are doing super well with your packing on your own.

Do think about something to keep backpack dry, something to carry iPhone, wallet, etc. around town in the evening, scissors or nail clippers.
 
Keeping the direct sun off of your arms will not only protect them from UV, but will keep you feeling much cooler. Sunscreen can help with the UV, but can't help with the coolness. I would replace the short sleeves with something similar to these:

In lieu of a long sleeve shirt, you could use sun-sleeves instead, like this example: https://www.rei.com/product/113328/co-op-cycles-sun-sleeves

Skip the sleeping bag, the liner should suffice and it will lighten your pack a bit more. If you find you are a bit cool while sleeping, you can put on your fleece.

What are you doing for rain/wet protection for your pack? If you feel that you need rain protection for your legs --- and in the warmth of July rain on bare skin is not big deal to me --- look at adding a 62 gram rain skirt. I only hike in shorts. If the rain seems a bit too chilly, then I'll pull out the rain kilt/skirt if my poncho (which covers my pack as well) is a bit lacking, although thats pretty rare. If i use a rain jacket, then I use my rain skirt rather than rain pants; they provide better ventilation and is quicker to put on since I don't have to fit pants over my shoes, or even remove my shoes. Your pack's base weight seems pretty good, but if you can get it down even more, that will help with the weight increase when you add the water you'll need to carry (about 1 kg per liter).

I used a large lightweight cotton scarf for a towel. It was easy to wash and dry, so could be used for sun protection on my neck as well.

The waist band in a Macabi will not do for sleep, it is too stiff.

I don't sleep in mine; I just wear it between showertime and bedtime. My waist bands aren't stiff tho. I wonder if that happened to yours when you got the cool modifications.

Modifictions were cutting 16 inches from the side. Alas I need ped ever inch of the waist band. :(
 
Ideal sleeping bag liner whether we want to add a thermal plus to our bag, or if we want to use it alone to sleep in shelters or hostels. Thanks to its mummy shape, it adapts perfectly to our body.

I'm with you on this. Although, I divest a tad more and no one sees or knows. In bag one way out the same, in bag only my business!
 
Deodorant, sunglasses,first aid kit, flip flops, womens hygenic products just in case, ziplock bags, headtorch or some sort of compact torch, water bottle, map and a sarong - can be used as a picnic blanket, towel, scarf, pillow and a journal + pen

Did you think about what you will be sleeping in. Hot nights you may be on top of your sleep sheets and you may be sleeping in a bunk bed 12" away from a stranger.

No response needed just a question to ponder.

No shocked, I just found it too hot to be inside the sleeping bag! And with a man I didn't know less than 2 feet away, I preferred more coverage sleepware.
