Mar 11, 2019...especially with a nice saline Godello or Albariño. As a winemaker looking for typicity I really appreciate how much these taste like everything that is lovely in the ocean. Having eaten these here and there over the last 20 yrs I'm always grateful to enjoy a few of these!

Grab them by that giant toe and by the base and twist. A little messy but if you love the fresh briny flavor and pair it with say a wonderful Albariño or crisp Basque white wine...you will be instantly transported to a very happy place!
I practically swooned the first time I ate Percebes at a restaurant outside Guernica in 1988. My host was so pleased I enjoyed them. I closed my eyes and felt at one with the ocean from which they came.
