I walked today from Sevilla to Guillena. On leaving Sevilla, we took the path Aling the rivier. It was no problem at all, not a single pool of water on the trail, no mud at all. It was beautifull with many flowers.
My experience on the Norte was that the common language along pilgrims was english. ( I agree that the language transfer course is very good. Presuming one speaks english well because that is the starting point of these essons
The Via Podiensis is beautifull. If your wish to walk short days relates also to walkingtime, you should consider also that the walk after le Puy includes much going up and out, in an out of the valleys ( to be rewarded with beautiful views)

I have walked the VdlP in 2015/16. I will go back in two weeks, won't walk to Santiago. But have chosen to repeat the stretch Sevilla Salamanca, because I liked that the most. Very nice cities like Sevilla, Merida, Caceres and Salamanca ( which I liked best)
It is only in Spanish, but if you have "chrome" on your device it translate easily. I love Gronze, I used it on all my caminos as my main source of information
Perhaps the combination Camino Ingles with finistere muxia is an option. Both would take about a week (I did not walk the ingles the walk to Finistere and Muxia is very nice)
