Thanks for this as I am considering a start at Fatima next fall. Five years ago I had an unofficial start at Lourdes, so this makes sense for my second Camino.
I would leave out the clothesline. I walked in October and would bring a 2nd long sleeve Tshirt instead of a 3rd short sleeve. Bought a pocket knife in France and used it quite often. Just remember you can always buy anything you forgot but really need.

Stayed at the municipal there last October. I'm pretty sure they had the disposable linens. It's upstairs over a bar and had a great time conversing with the locals. Make sure you walk up and see the church.
I did this route in late September last year. No problem with gites/albergues being open, and did not need to call ahead. If I remember correctly, the monastery in Sarrance opened at 3 pm and the gite in Urdos opened at 4 pm.
