If you are going to bring your DSLR, I would suggest that you carry it in a away that it is readily available. If you keep in it your pack, I think you would be less likely to use it and it would just become dead weight.
Re. sending your bag from Portugal, I have no personal experience but have read that sending from another country (even in the EU) into Spain can cause all sorts of delays, so perhaps you can do a search on the forum to learn more about that.

One important takeaway from my Camino experience is that merino is amazing! (I'm wearing a merino shirt right now...) If you can make it work for you without a negative reaction, I would go merino all the way. This time of year there are good sales, so give it a try!
