I walked from Burgos last February.
The cold albergues I encountered:
Hospital de Orbigo - church albergue, no hot water either
Sahagun - municipal. cold, but nice and pretty as well.
Monestario de Samos - stay in Triacastela, but make sure to stop in for the tour.
La Faba - cold, very basic...
You are not going to be running and depending on how quick you move you really might not break a sweat. It is mostly a long walk on gentle terrain.

So I have walked from Burgos to Santiago de Compostela in Febraruy before. I found some good tickets to go back to Spain during Christmas and have already bought them. My choice is should I try to bike the whole Camino Frances or just walk from SJPP to Burgos (fill in from my previous trip)...
