I am on my 10th pair of Columbia trail runners, i wear a size 15 to accommodate my size 14 foot. The Columbia shoes are normally quite wide with a very comfortable toe box. I have had to adapt to 2-3 different models but the quality and comfort is always there.
Welcome to the forum, I lived in Cambria 45 years ago and loved it. You will find more of yourself on the Camino, I keep learning more and more over the past 3 Caminos and look forward to my next.

Walking the Meseta last year from Burgos to Astorga was the best Camino experience I have ever had, the calm, the quiet, the ability to go inwards and to really get close to the land that god created made a great impression on me. Enjoy your time there it is very special.

Absolutely make reservations, I did the same Camino as you starting in Burgos. Be aware that you need to watch carefully for your bus at T4 as the buses do get into a jumble as the airport departures get busy.
I did my Camino when I was 69 also, a wonderful experience and the coastal route is fantastic. My costs were around 50-60 euros a day for private room with showers and food inexpensive compared with the Camino Frances. For private accommodation book ahead if at Albergue no need.

I did the Burgos to Astorga stages this May and had no problems drinking the tap water at all. I don’t drink alcohol so water is my drink of choice. Enjoy!!!
