The shoe issue could be your challenge if they are new and not fitted enough.
Camel pack- 1 litre is fine. There is plenty of water holes along the track.

I was 2 days ahead of you last year. I started in Burgos on the 19th- and ended up in Santiago 25 days later.
For me- the Meseta was divine! I loved every step!
In 2019 i’ll return- and will do the Meseta one more...

An hostel from 11-15€ , Albuerges maybe half of that. Boccadillos and pilgrims meny from 5-10 €. Approx. Note: the food is not the point. This is not a culinary journey. ( nevertheless- the ham, cheese and local sausages are world class. Not to mention the wine.)

I used a Camel pack which i stripped down using only the bladder and hose. 1,5 litres which i filled up in the morning and put it on the top under the lid of my back pack.
It's better to end up with 0,5 litres to much at the end of the day -than run out of water. Dehydration is not preferrable...
Don’t worry too much about distances. You seem quite fit- so my advice is: listen to your body.
I spent 25 says last year (May-June) from Burgos to Santiago. I was slighly ower weight and not fit at all- but completed with a smile on my face. I did about 20 k each day- and had 2 resting days...

I reccommend Dovre/Dombaas to Oppdal. I did that one 2 years ago. Very nice and it’s about 90 km. Oppdal have train connections to Trondheim/Nidaros cathedral. There are manned albergues avaliable except one refugium where you can get a meal and pay later by paying an invoice for the goods...
