1. Yes. Solitude dominates. Plenty of reflection time.
2. Tarmac can be addressed often with walking along the dirt next to the road. Not a huge amount of busy road. Lots of quiet country roads.

Purky has hit the nail on the head. I walked from Vezelay to Marsac this July (2017). I have nothing to add to this perfect description besides enjoying the varied beauty of the landscape. Not for those who need to be entertained... Bon Route!! :)
I had the opportunity to do the northern route from Vezelay to Marsac this past July (2017). It was beautiful and solitary. Forests, fields, villages, cities. I loved it. Bon Route!! :)
I had the opportunity to do the northern route on the traditional Camino (not the GR). It was beautiful and solitary. Waymarking was fine. Not sure what "better accommodation" means to you, but there was a good mix of refuges, chambre d'hotes, and bar restaurant hotels. Never a problem...
