My favourite albergues on the Primitivo were La Quintana in Grado, los hopitales in colinas d’ariba (perfect place to stay before doing the hopitales section) and Porta da Grandas in Grandas da Salime
My suggestion would be Ponferrada because of its size and historic things to see, and you could pop out to Bierzo wine area, thereby avoiding the need to overindulge on next day walk. Or O Cebreiro if you want more time in mountains. The other...

After o cebreiro, I don’t think there’s an obvious place to recommend for a rest day. Maybe Sarria, if you go to the older parts. But maybe better to have more time in Santiago and also I recommend bus trip from Santiago to other parts of Galicia...

Starting the Primitivo on 20 August and deciding how much prebooking of accommodation was needed at the moment. Are there some towns where accommodation is often full ?
