I’m headed out with my mom soon, and she’s remembering something about a place where octopus is roasted on the beach? Does anyone know what she’s thinking about? Internet searches come up empty.

I guess you are thinking of preparing her a surprise.
Well, a lot of questions should be answered first to offer you an answer. When she experienced that? Where exactly? The name of the place? Was that in a restaurant? In town or some hippy community roasted octopus on the beach? Take a look at the map and you'll see how much coastline there is only in Galicia...

Impossible to answer!

Pulpo is not normally roasted in Galicia.

Roasting anything in Fisterra is a problem because fires on the beach are prohibited. A wild fire was started earlier this year by pilgrims on the beach, so enforcement should be expected!

Get the boiled octopus all over the place, drizzled with olive oil and pimiento. Starting in Sarria and continuing through Portomarin and Melide, it can be found in pulperias everywhere.:)

It was 10 euros for plate of yummy boiled pulpo with a few of bread and a bottle of beer in a "pulpo-only" restaurant opposite to the albergue where I stayed in Melide in April 2017.
