Paid employment is very rare, priority goes to locals, or those willing to work for minimal wages. Lots will take volunteers -- unpaid labor! Be careful of exploitation. If you are volunteering, stick with non-profits.
The best advice I can give is to remember the places you liked, where you can imagine working. Get out your guidebook for their address, contact them with your goals, and see what they say.
