I can report, for personal experience, of a couple who was attacked and bitten by to dogs on Via de la Plata, while they were walking the same stage as mine.
I was attacked by a dog myself, in 2019 on Camino Catalán, but managed to stay (rather...) calm and i could get far from what the animal...
If you can understand some spanish (castilian) language you could find your accomodation opportunities on Gronze, maybe the most updated website (and app) about the Caminos in spanish ( gronze.com )

It also depends on how many days you have for walking.
The Camino Primitivo from Oviedo could be a good option if you can walk for 10-12 days;
whenever you've got 4-5 days more, you could add the Camino del Salvador, going from Leon to Oviedo and, from there on, walking the Camino Primitivo...

Lucca is a wonderful town, perfect as a starting point; maybe the first stage to Altopascio is not so nice (the trail goes across a very populated and industrialized area) but, further on, you're going to have a 14 day full immersion in one of the most beautiful parts...

Yes, that Albergue!
It's basic but clean and comfortable and the sleeping room is very spacious, if compared to other albergues i slept in this year.
It's a pity there's not a kitchen, but the rest is good.

In the register there is a Nel from the Netherlands that found it fine to have had the opportunity to sleep here for a night ("Wat fijn dat ik hier een nachtje mocht slapen!").
It was on april 6th and the begin of april could be compatible with your memory...

Being alone today in Siete Iglesias de Trabancos (where i arrived too early) and having nothing better to do, i noticed in the sleeproom of the albergue the register of pilgrims who slept here in the past 5 years and half, as this register starts from january 1st, 2012.
...so i began counting...
