Rick, my wife and I just got new Verizon (US carrier) iPhones, and the basic account is on the eSIM (or virtual SIM as it's also called). There is also a slot for a physical SIM that could be used for a "traveling" card for use in other countries.

Ditto on the Gold Bond Friction Defense -- two Caminos, zero blisters. It's readily available at Amazon, Walmart, and most pharmacies in US and probably in other countries as well. I also wore Smartwool socks and L'eggs ankle highs borrowed from my wife's dresser drawer as liners.
Since the recording of passport information is required at places of lodging, including albergues, a "professional" pilgrim might have a hard time explaining why the name on the passport was not the same as the name on the credential. However, that requirement does not apply for sellos obtained...
I saw someone stamping a whole stack of passports at one of those freestanding, self-service passport kiosks between Sarria and Santiago. It didn't dawn on me til later that he might have been a tour guide or some kind of group leader.

Are you sure that e-bikes are recognized on the Camino, or more specifically, at least for the last 200km (that's the requirement for bicyclists as opposed to 100m for walking)? I don't know, but I'd advise you to check with the Pilgrims Office before going too far down this road.
