A combination of the Madrid, Salvador and Primitivo routes would be my choice if I had the time. Followed by a hike to the end of the world, of course.

To visit Fisterra first you could leave the CP at Padron and head, on country roads (CP-7401 & DP-1302), 24km to Negreira.
From there it's two days on the marked trail to the end of the world. You'll probably have to catch a bus back to Santiago though (unless you're really fast)...
There's a train from SDC at 08:30. Change at Palencia. Arrive Santander 18:15ish. For some reason you have to buy separate tickets for each leg via the RENFE website.

I always walk in May and October. The weather is generally better in October.
Last October on the Primitivo the weather was warm and sunny apart from a couple of obligatory wet days once in Galicia.
Don't expect it to be all that quiet though.

I just did it and it's nice.
Orense has regular connections to Vigo.

I'm having trouble finding affordable accommodation in Madrid for Saturday 22nd April. Does anybody know of a pilgrim friendly hostel?

I can recommend the Camino del Sur from Huelva. Easily reached via a tourist flight to Faro, just across the border. No albergues though.
