You already have your shorts why not get a pair of sports/running tights/leggings and wear them underneath your shorts. If it warms up you can slip them off later. Win/Win! I won't add to all the doom and gloom here regarding jeans but most of it is true.
I'd ditch the fleece hood for a down jacket or equivalent (I have a Patagonia Micro Puff) as this will provide better warmth but pack smaller and, as said above, without a hood which is just a faff and you already have cap/hat/buff. Good Luck.
Many years of mountaineering and Morris Dancing wrecked my lead (left) knee and I had a half knee replacement eleven years ago which solved my problems. Now it seems the joint replacement was not correctly aligned and I'm back where I started and waiting for my knee replacement to be...

I order these from the Amazon France site for delivery to me in the UK but they might not ship to Oz; your best option might be to buy when you get to Europe, there are tech shops all over the place these days. You'll not go wrong with Anker. Good Luck.
I have a Patagonia Nano Puff jacket and I think that it is the garment with the best warmth / packed size ratio of any I've had. It is my "go to" jacket and always goes with me when I'm travelling.
