I will be walking from Lourdes to Somport then on to Logrono from next week.
A flight from Paris to Pau then train to Lourdes or Oloron Ste. Marie is a good option. A bus leaves Oloron to Somport and Canfranc daily.

I did the same thing.
Train from CDG to Gare Montparnasse then an overnight stay in Bayonne.
The following morning I headed for SJPdP and walked to Orisson after dropping by the Pilgrim's office.
Hopefully things will be back to pre-COVID times in early November. I have just purchased my tickets for Paris then on to the Camino Aragones from Somport.

The Santiago to Madrid route is covered by a very efficient train service.
Try starting at Segovia which is a lovely city both in architecture and cuisine then walk towards Madrid...

Stayed overnight at Bayonne in 2014. Lots of cafes next to the Train station. Close enough to spend a few minutes for a bite and drinks.

I stopped for coffee and tostada at the Cantina O Peto in Penasillas. The lady there was very nice and advised me about the ascent to Monte Faro. Unfortunately I did not ask about lodging at her place. Not sure if they offer rooms...

I have stayed at the Holiday Inn Express Tres Cantos for my Camino de Madrid in April 2017. I never felt comfortable being locked in overnight at the Ayuntamiento.
The room included buffet breakfast.
Good for a late morning start to Manzanares El Real.
