Also, do people carry their own sheets? I read that some Albergues provide disposable sheets but not all.

As far as I know you only need stamps from the last 100 km to receive the Compostela but if you are planning to walk more why not get some more stamps to fill up the entire passport. One from each town you're staying at for the night should do.
I came to the same conclusion. I started planning with too many details and am just realizing now that 5 weeks is a long time and sticking strictly to the plan is almost impossible. Plus it seems like a refreshing idea to just go with the flow.
