Your stages seem very reasonable. I walked a similar route as you last year (except the Spiritual). I loved that Camino <3 I started with two night in Porto, where I walked and then took the metro back, and than the bus out to start walking again. That way I got a slow start without my backpack...

I looove planning! Its part of the experience for me. On my first Camino I was stressed about keeping to the plan - "what will I do if it does not work". The camino had a couple of lessons for me, one of them being that my plans dont work. My body behaves different from day to day etc.
So now...
I walked the river ecopista and split it in two days staying in Vila Nova de Cerveira (got a stamp at the library 😍 ). It was a lovely walk. A lot of shade and nice totally flat path. But boring, and nothing open along the route. I was even contemplating renting a bike and biking Caminha to Tui :p

PS! A tip, just after you get over the Luis I bridge (if you cross it on the bottom "floor") you can use an elevator inside the parking garage to the top of the hill to Jardim do Morro park, where a lot of people gather to watch the sunset...
Not far - Google says 15 minutes walk. But I remember the hill up to the Cathedral being steep 🙃 But everything close to the river would give you a steep walk to the Cathedral.
