If they are required to keep credit card numbers and addresses, this poses a security risk to people who own those credit cards. Yet another reason to pay in cash.
I'm hoping to get to SJPP, go to the Pilgrims Office and comfortably walk to Orrisson that afternoon. I'm old, so I walk slow. I'm not sure the bus would get me there early enough to do that.

I found it was easy to buy a gallon of water in most places. If the hotel didn't provide it I would buy it, drink my fill, fill my bottles and then donate the rest to a pilgrim down the hall or just left it.

Personally I think you're being romantic if you're walking 500 miles. One staff will throw off your balance and rhythm. Poles make your movement much more efficient. If you're walking 66 miles, it probably won't matter.
I'm 73. I want to keep walking for a long time, so I walk a lot. Most days I walk 3 miles in the morning and 1 1/2 miles in the afternoon. Before a Camino, I'll increase the afternoon walk a bit and add a backpack.
Actually rubber tips are much better on concrete, slippery tile (like in parts of Portugal) and cobble stones. I wouldn't walk the Camino without them and that is without ever considering how loud the alternative is. But you do you.
You could spend one night in Santiago, and then take the bus to Finisterre and Muxia. Spend one night in each and be back in plenty of time for your flight home.
