As mentioned, you will need to do some planning - most albergues will have a list close to xmas/new year of where is open on those days - these are the most difficult days, only a few places open and a need to work out food as well -...

I started in Pamplona last year - most albergues were heated, but a couple not.
Not all are open during winter/feast days, but the albergues have a list of who is staying open and will often help out/ring ahead to find out. The one day we did have problems with...
There's normally an updated list in the albergues - have to be especially careful to make sure where is open 24/25 dec, 31 dec, Jan 1 and Jan 6, as a lot of places shut on these days - oh and most shops, etc are shut Dec 25, Jan 1 and Jan 6.
