I believe it's line E1 from Bilbao to Amara Donostia (San Sebastian) then line E2 from Amara Donostia to Irun.
As there's a change, you might be more comfortable choosing bus. But I love the clean, new, cheap, easy Euskotren trains.

In theory, the Eurostars that cross the channel won't allow anything longer than 0.85m (0.75mx0.53mx0.3m elsewhere). I don't think that restriction is on the Eurostars that used to be Thalys and I've seen plenty of luggage longer than 0.85m crossing the channel anyway. But length...

I'd say change at Vitoria-Gasteiz instead of Palencia, the connection times work well. Although current bus replacements (link below) between Ourense and Monforte mean I've just used the Madrid route...
I'm a massive pre-booking fan! I love being able to choose my seat, especially on the TGV because that route has double-deckers. Pre-booking means my ticket is already safely saved on my phone (and email) and pre-payment means I can spread my costs and even consider splashing out on 1st class...
There's currently no overnight trains in Spain. So you would need to stay overnight in Hendaye if you wanted the 07:12 TGV to Paris on the 24th.
The direct daytime SdC to Irun train that you recall no longer exists. Changing in Madrid is the option you've come across.

I've variously done all the options you've suggested (although not all for camino trips). However, timetables change regularly and some services I've taken no longer exist. So my experience with the travel schedules I've used would not help you in determining minimum hotel...

@CWBuff That looks like a double decker TGV (first class) and we can assume you're doing Paris to Bayonne so The Man in Seat 61 tells us it's the Oceane interior which means the seats always face forwards (except table / ends).

Looks like the eating and drinking restriction on French public transport will lift on the 16th February (Wednesday). I believe masks are still required if not eating/drinking but they can now be removed while in your seat enjoying your baguette, stinky French cheese and half bottle of wine.
Just to note that eating and drinking on French public transport is currently banned because it requires dropping your mask. That will change! Just check before you travel. But, if you're travelling soon, the caveats are medical need and a super quick drop of the mask for a glug or massive bite.
I've found people really love to give you something that you'll use everyday when walking. I guess it's because, when packing light, you treasure every item. And I adore being reminded of them when using even the most mundane items of kit.
But there's definitely things you need to gift yourself...
