I think 40KMs per day is on the low side. I did SJPP -> Santiago last year. I'm not a very active cyclist, but still somewhat sportive. I left every day around 8AM and cycled until 4PM. Average kms per day was 80, which makes about 10km/h average (that's including a lot of stops, pictures...
I cycled the camino first 2 weeks of october last year. The weather was exceptionally good for the time of the year. Yet, in the morning, it was ice cold. Bring both full cycling gloves (morning), and fingerless gloves (day). Wear many layers, which you discard one per one as the day progresses...
definitely needed: some chain oil, and a small rag to clean the chain. I didn't have one last year, and the dust was grinding the chain every 3-4 days. Had to borrow oil from another biker twice.
I did the camino from SJPDP to Santiago last October by bike, some of my learnings:
