We did exactly the same. First walk Vigo to SDC via spiritual variante, then returned and did Porto to Vigo along the coast all the way. From Vigo we got the train to SDC then got a bus to Cee and walked to Finisterre. It was great. No problem with accommodation. Did tend to book a night or two...
What ever is comfortable for your feet is the most important. I wear flip flops in rain or sun but the next person couldn't. I do stock to the same brand when I get a good fit. Good luck!

Obviously it is your Camino and you must ultimately decide, but Vigo to SDC, adding the Spiritual Variante is a stunning walk. Enough people to make it a socialable experience but you don't have the crowds. Loved adding the boat journey as part of the Camino...
I did from Vigo to SDC in June and added the Spiritual Variente. This was considered by pilgrim office to be 108km so just got compostella! The boat journey to Padron is included as part of the journey. The walk from Vila Nova to Padron is 28km on busy main road and not particularly pleasant...
Spiritual Varient is a little bit extra from Pontevedra - Armenteira - Villa Nova derousa, then a boat to Padron, where it rejoins Portuguese way. Absolutely beautiful and very peaceful. So so recommend it!!
