For the beach, I’d stop in Tapia de Casariego. Pretty little port and lovely beach.
But there are so many lovely spots to rest. When I walked ,I had a day off every five or six days so had the chance to enjoy the surroundings.
As an aside, if you’re starting in Baiona, I would recommend not following the official way marked path. Follow the coastal path, it’s really easy and beautiful. Just keep the sea on your left side, you can’t get lost and you’ll eventually come back to the official path. Buen Camino
I remember plenty of setts but not true cobble stones. I walked it 10 weeks after an ankle fracture. As long as I stayed to the side of the path I didn’t find it terribly uncomfortable.

From Baiona, don’t follow the yellow arrows inland. Instead follow the path next to the beach around the bay. Just keep following the coast, keeping the sea on your left. It’s a beautiful walk and will then lead you back to the official route. It’s really easy. Enjoy.
I’ve heard that the Portuguese is very difficult to walk backwards but have nothing to back this up with. I see no reason why you wouldn’t be allowed to stay in Albergues, no one would know which way you are walking.
I found Portugal to be a little cheaper than the Norte.

We stayed mainly in private rooms but the pilgrims who were using the albergues had no problems. May be worth booking ahead once you join the Frances where there are suddenly hoards of people!
