that wasn't my experience, there were numerous dining ooptions and Albergues who catered for vegans. There are Albergues that are entirely vegetarian. There are reasonably equipped kitchens in most places too and health food shops in many locations
Couldnt find the Indian place in Leon or the reputed veggie restaurant, they may well be gone, A Balsa is a wonderful stop,veggie, run by lovely pilgrims and eco friendly, my favourite stop on the camino, heavenly surroundings, recently opened.
