We have done the entire Camino Frances and have broken up all the stages to accommodate our age. Just use the Brierly guide and look for the distances you want. Then check something like Booking.com for places to stay. You can easily make your own journey.
I would definitely choose Pamplona to Logroño. It is beautiful wine country with good food and many villages. I would also do no more than 15km a day so you can really enjoy your walk. Better to book ahead too. La Perla is a lovely hotel in Pamplona, since you're celebrating.
If you could get to Tricastella and walk to Samos one day and then to Sarria the next, that would be nice. The walk into Samos is lovely and seeing the monastery there is special too. The walk from Samos to Sarria - so-so.

Hostal Riosol is about 300m from the train station and a short walk to catch up to the Camino leaving Leon. Stayed there last night and clean and nice.
