From NYC to where? Paris, Barcelona, Madrid or Lisbon? Then you are a full day or more, to SJPP. If you end up at Pamplona or Bordeaux at the tail end of your first day, then I suppose you would get to SJPP early enough to walk up to Orisson. I wouldn't though...the afternoon in Saint Jean is...
Yes, just keep in mind that Spaniards come out in large numbers during Semana Santa (Easter week). So, accommodations are much harder to find.

Saw that cnn story. Very nice couple with a real story about bridging culture and distance from family. I also saw a budding romance that culminated in marriage, on my 2017 CF. It’s really great to see such good people who find each other
FYI, Orisson closed on Oct 15 last year, which was the day I went from SJPP to Roncevalles. So, last night was the 14th. I am not sure if that indicates anything about this year, although as the very knowledgeable @Katar1na says- they are taking reservations through the end of the month.
I can say, from experience, that Semana Santa is a crush on accommodations well outside the last 100 k. I had to walk short sections from Logrono to Belorado, without reservations, in 2017.
I cast my vote for Vigo…and I haven’t even been there. I did finish off my last Camino (Del Norte) from Pontevedra, because I couldn’t face the hordes from Sarria onwards again. You will meet plenty of pilgrims on the Portuguese (2nd most popular Camino).
