Right. The whole charm of Camino is, that you can afford to go without an exact schedule in advance (just not to miss the return flight) and plan it on the go.

Well, snoring or not, if your aim is to get outside your comfort zone just forget about albergue booking and keep walking repeating "Camino provides" mantra :) ... sooner or later you may start to enjoy that sweet&bitter sense of unpredictable fate what expects you before the day ends.
Perhaps that is not what a pilgrim would usually expect, but then again you can be proud you made it :)
On the other hand, before diving into the trail walking adventures, mastering some simple descending techniques might be helpful:
If you fancy sunrises, don’t miss the opportunity to witness one leaving early from Castrojeriz.. pretty steep path uphill, but it is worth the effort 😎

The part from Astorga to Sarria is one of the most spectacular on CF imho ... so wherever you are currently, you may consider to buss to Astorga right now and then in 9 days walk to Sarria. Stage suggestions plus/minus might be as follows:
The age is rather a relative number, but no-one cal tell you is it possible for you to climb the Montejurra than yourself. Technically it was just about 400m elevation gain on the slope, if I remember correctly. Poles are pretty helpful, especially descending. Worth to go in good wether only.

If you have zeitnot there are some boring stages later on where one can develop rocket speed. For instance from Sahagun to Leon by Roman road at once.
