I would reccomend that you plan on 2 nights in Saint Jean. It is an interesting town and if anything goes wrong in your getting there, the one day buffer may be nice to have.
I did the same as @NorthernLight, I had to get the timing right. The next year I caught the bus in Zauburi (spell check isn't helping here) and paid the driver directly.
I would reccomend option 2. There seem to be problems with unpredictable strikes affecting train service in France. Express Bouricott shuttle is an excellent connection to Saint Jean from Biarritz.
On my most recent trip I intentionally stayed two nights in Saint Jean. It is a nicd tiwn frpof relaxed walking around and gave me time, if needed, to solve airline "problems". It turned out that I didn't need the time, but walking around Saint Jean was OK.
This spring I checked my poles and a small Leatherman tool in California . I carried my pack in the cabin. The poles got lost but were easily replaced in Saint Jean.
