I did something close to what you are suggesting. The municipal in Presedo only has 12 beds, but if you get there early enough in the day you'd be fine. Galicia in August has milder (cooler) weather than the rest of Spain and I found it quite pleasant. The hydrangeas you will see on the route...
Being in Galicia, the nearby ocean moderates the temperatures very nicely. I walked the Inglés in early August 2019 and it was never hotter than low-80’s F (30 C). Buen Camino!
If you can get from the airport to the downtown train station, there is a train from A Caruna to Ferol that we took in 2019, mostly goes along the water and is a very pretty ride.

We stayed at the municipal albergue. Minimal kitchen but wonderful clean friendly place, some very cool stonework. In the top floor, half the beds are singles not bunks because of the slanted ceiling.

I was worried about the same thing, but there were three different groups that we crossed paths with multiple times. I think there is are a certain number of perigrinos who prefer walking 10-15 km in a day rather than 25-35. Buen Camino!

We were at the municipal albergue “Casa de Pescadería” in Betanzos just 2 weeks ago. It is beautifully renovated, with 36 beds. Some of the beds on the top floor are singles, not bunks, and perhaps worth the extra climb! The kitchen unfortunately is equipped with only a microwave for cooking.
