Be aware there is a learning curve for poles. Also, if traveling to Spain by air, they will have to be in checked luggage.
As someone said, buy your new shoes a size larger. I swear my feet grew that size, and didn’t shrink when I got home. All my original shoes are now tight!
I recommend boxers with a nice pattern, as you may be walking around the Albergue in them. Solid colors are OK, but geometric patterns make you stand out!
I ordered a pair of these a few days ago. I used ASICS for my first go-a rounds on the Camino, but, again, they changed designs and their replacement is junk. With size 16, the choice is small out there. Hopefully the NB will fill the bill!

Not all backpacks are created equal. Some are adjustable as to the length btwn the waist belt and shoulder straps, allowing a customized fit. I use a Bergans of Norway pack because at 6-7 I need one that can adjust to extra long.

I tend to keep my phone, which I use for its camera, close to hand. I have no concern with charging my power bank overnight, if necessary, but have heard too many stories of disappearing phones.
A good ankle brace would assist with your concern. I had failed ankle surgery and one was given me by my podiatrist. Locks up tight and I walked 150 miles on the Frances using it and low quarter shoes.
