My planning for next year (early May?) caused me to find out about travelling from London to Bayonne by rail. Here's the answer I got from Eurostar, hope it helps.

Eurostar services between London, Ebbsfleet, Ashford, Paris, Brussels, Lille and Calais can be booked up to 120 days in advance of the return date of your journey.
If you require connections with the TGV network, trains are usually available to book 90 days before the return date of your journey.
I would advise that you give us a call on 08432 186 186 or +44 (0) 1233 617 575 if calling from abroad and one of our advisors can check for you, as sometimes we have tickets released sooner than expected depending on availability.
