I think that to bus from Santiago to Sarria you have to pass through Lugo. You could get off there and walk to Santiago and qualify for a compostela as well as if you walked from Sarria. You would miss the Sarria crowd until you connected to the Camino Frances.
Friends took the train to Sarria to meet us in 2017 and had no problems. By taking another flight to catch a train, as a very frequent traveler, I would suggest eliminating as many moving parts as possible. But, Buen Camino however you start.
To answer your original question. I have taken groups on both routes and the strong concensus is that people prefer to get the train to Sarria rather fly in to Santiago and bus out
