for family reasons, I need to be somewhat contactable on the Camino. How consistent is the service on the CF? I realize it may vary by company.

The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.
We found it to be pretty good - didn't make a lot of calls, but when we wanted to, we had service (AT&T), even in small towns and villages. Generally speaking though, text is easier than phone calls - even if mobile service is sketchy in an area, you can usually send and receive texts if you have at least a small signal.
 
Get a spanish phone number with Airalo. eSim, so no physical SIM card. Easy to use app to add more funds if needed.
Coverage improves every year. AT&T uses Vodafone towers, so you will get the same coverage as getting a Spanish Vodafone SIM chip. However, Vodafone is less expensive for data.

I got Orange coverage pretty consistently.
 
The focus is on reducing the risk of failure through being well prepared. 2nd ed.
2 years ago I used Digimobil. They are a prepaid service and I believe they use the Movistar network. From Pamplona to Santiago, the only place I remember not having coverage was Atapuerca. Other than that, just about everytime I took my phone out, I had 3G coverage. (I know there were places with 4G, but my phone only had 3G.) I think as long as you use one of the major carriers in Spain, or a prepaid company that uses them, you'll be fine.

Turn off your phone!

I always inform those from whom I would accept a call that I will have my phone turned on during a specific time that accommodates the time zone change. Then I save my battery...

I walked from Ponferrada and very good Buen camino !
 
The first edition came out in 2003 and has become the go-to-guide for many pilgrims over the years. It is shipping with a Pilgrim Passport (Credential) from the cathedral in Santiago de Compostela.
We walked from SJPP to Muxia and had only had two days where we didn't have cell service. We used orange.
