Hi. I have an authentic credential obtained by mail. Its blank at present. I can write my name and passport number etc. then have it stamped at the cathedral or albergue but I expected it gets enrolled somewhere as a pilgrim that sets off from Seville. Any insight on this.

The credencial never gets 'registered' anywhere, you just let it be stamped in different places and that serves as a proof of passage for obtaining your Compostela later.

In theory, the national association registries are kept for the use of the Pilgrims' Office at the Cathedral, but I have never heard of them being asked for. It may be that Santiago has forgotten all about this.
