Cycling from Le Puy to St. Jean Pied de Port

We are planning to cycle the Le Puy route in September and looking for information on the best route to take with bicycles (pedal assist). We are trying to decide whether to go with a company for luggage transfer and hotel bookings (self guided) or to go by ourselves like we have in the past.
