I will be arriving at Madrid airport on Thursday September 15th. Want to take a bus to Ponferrada to begin my walk to Santiago. Where do I catch the bus? Do I need to have my credential stamped before I begin my journey?

From your post I am assuming you already have a credencial. If so you can have it stamped at the first albergue you stay in, or a church or a bar or anywhere with a sello. There are many places There is no need to have it formally authorised anywhere before you begin. For the purpose of receiving a Compostela the only essential evidence is that you should have two stamps per day for the final 100km before Compostela.
Beware you may have to change bus in the Madrid Estacion Sur. We did and nobody told us that the bus out of the airport didn't say the final destination.
Have your credential stamped when you get to Ponferrada. And as said before - twice a day from Sarria onwards.
ALSA has some busses at the airport or the Metro can take you to the train, I believe the train goes to Ponferrata it goes to Leon and Astorga.... Ultreya... Willy/Utah/USA
