We have our Dutch "Pieterpad " approx.550 kms from Pieterburen in the far north to the Saint Pietersberg (mountain ha ha in our flat country 300 meter the highest dutch mountain) nearby Maastricht in the far south. Beautifull ,well facilitated with everything and directly linked to the French camino to Santiago

Right, the forums and route info are mostly by country, eventhough the routes themselves cross national borders. But there are a few resources that cover a larger area.
The network of designated European long-distance walking paths is described and mapped on Wikipedia: http://en.wikipedia.org/wiki/European_long-distance_paths

There is a European Ramblers Association http://www.era-ewv-ferp.com/

In addition to these designated e-routes, there is a broad collection of Saint James-related routes; Camino in Spain, Chemin de Saint Jacques in France, Jakobsweg in the German-speaking areas. Plus, there are regional routes (St Martin of Tours in France, Martin Luther trail in Germany as examples) numbering in the hundreds.

So I would suggest to start by choosing the parts of Europe that you are interested in visiting, either for historical or scenic or personal interest, or previously established language capability, and narrow down the list from there. A relief map of Europe might be a good place to start; there seem to be mountain ranges in the darndest places!

I agree with Falcon, go to Peter Robbins' site first - it's a brilliant interactive resource and will help you put together a route. The long-distance paths will tend to connect with the major French departure points of Vezelay, Le Puy and Arles, so you can plan your route backwards from those points. Or have you considered the Via Francigena to Rome? There's an Alison Raju guide in English
