Fares from SCQ to Paris CDG...and flight schedules

I wondered if anyone has mastered the Santiago flights, what is a good deal, possibly when to find them, or a route that I might not have even thought of. For two Caminos it was just me flying from Santiago to Paris so I didn't pay attention to the cost. My children and I need to be at CDG on May 30th for a 1400 flight.
My last Camino we flew out of San Sebastian because we wanted to spend time there before leaving and got to CDG and curled up in a corner to sleep (it was great!).
My goal was to fly out of Santiago on May 29th as late as possible. It seems like the 28th and 30th have 1900-2100 flights BUT not on the 29th.
Is there a chance they might add flights and any advice on securing a good rate.
