I'm wondering what, if any festivals and holidays fall while I'm walking between May 15 - June 22?

May 14 is Ascension and May 25 is Pentecost. The negative in France is, it may mean day long and/or early shop closings on the weekends and a greater number of tourists. As far festivals, it depends on where you are walking which you did not mention.

I've had the pleasure of witnessing Corpus Christi celebrations in Carrion a few years back.
Are festivities for Ascension day in any way the same?

Ask along the Camino! Hospitaliers, tourist information offices, priests or nuns in the church, printed notices outside - but do ask!, there may be something so fantastic so Spanish three kilometers off the Camino and you may never know!

If it color you are looking for, search out the market days. For example in Estella it is on Thursday and it is priceless.
