Has anyone walked from the Atlantic to SJPP using the GR10 or Gr11(?)? What is the infrastructure like along that part of the GR. Did you meet other hikers? What month did you do it? Where did you sleep or eat? What were the options? I hear that part is less difficult that the part I did more to East of Somport. How would you rate the difficulty compared to another Camino if possible? Thank you.

The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.
Gr10 has a tough day over the cretes de iparla but the gr11 has a section with no accommodation and you have to bivouac

Not quite what you are looking for but this may do as an alternate. From Irun head south on the Via Bidasoa, a Via Verde (usually a rail trail as we call them in the US). For a short distance use secondary roads to Berroeta on the Camino Baztan. Follow the Baztan to either Bayonne or Pamplona.

Edit: From Berroeta you can head to Bayonne on the Baztan and meet up with one of the GRs near Elizondo (I think the Spanish one, GR11?). There are albergues in both Berroeta and Elizondo but check for them being open; they were closed at the height of the pandemic.
