I plan to start my walk this Monday from Bilbao, and is there anyone who knows where to buy the pilgrim passport from?

The one from Galicia (the round) and the one from Castilla & Leon. Individually numbered and made by the same people that make the ones you see on your walk.

Not at all; there is no official begining stamp. Just have your Credential stamped daily where you stay or eat, etc. However do have it stamped twice a day for example where you start and stop during the last 100 km. It is only those 100 km that count towards your Compostela.
