I can see where this addition as a Camino resource could be valuable. The layout is simple but chock full of good info.
I stayed at many of the highlighted albergues and especially liked Casa do Fernanda.

Is publishing this material here defeating this purpose, and perhaps breaching any intellectual property rights held by the authors?

Never underestimate the good will of people in these kinds of situations. When I had my Credentials thing running, I offered the postage for people, but people would still give me Money for the postage (and sometimes even more).
