I think the easiest way might be to take the train to Zamora and start from there.

Trains to Zamora leave from Chamartin station. You can take the train directly from the T4 terminal of the airport to Chamartin station.

I caught the bus to Zamora from Madrid, it was €17 in September this year

I would agree but there is a bus from Zamora to Granja. I did that in 2018.
