I have been studying Spanish in Salamanca for a month now, and am leaving tomorrow to begin my first "vacation" camino in Sarria. After having just packed all my things, I'm overcome with anxiety. Is this normal? And it's not an "I'm so excited, I'm nervous" anxiety, this is full on panic-attack. Help?

¿ porqué ? It is only about 120 kms and you are not the only one who is walking this part.
Anxiety is a bad counseler ! Just go and enjoy. Let it happen ! Arriving in Santiago you 'll wish you were for longer time on the camiño. It is a virus. It is an addiction. Wished I was there now. Have to wait untill next year (for the 3 time then )

Also, Question: I know you need 2 stamps per day in Galicia. But what if you take a rest day (even on the last 100 km)? They are expecting rain this weekend so I was planning on just staying wherever I landed until the rain let up on Monday. Will I still need 4-6 stamps from the same city over the course of 2-3 days?

All will be fine. In regards to sello's, Just ask for one everywhere you stop. The Majority of bars, restaurants, hotels have them. It will not make any difference if you take a rest day.
