In September, perhaps and in October, it depends; in both cases what kind of accommodations you are looking for. There are several levels of accommodations from public albergues to 4 star hotels. The more you are willing to pay the better chance you will find a place to stay, most pilgrims tend to be traveling on a budget and so the less expensive digs get filled first.

That may depend upon how important it is to you to stay in a hotel/pension. That was my preference (but not an absolute) and there were a couple of weeks in September, 2013, that the desk at the hotel where I stayed called ahead for me and reserved my next night. By October 1, that was no longer necessary. I didn't do that on the days that I didn't want to commit to a specific distance. I never went without a bed, although some were more interesting than others.

Why book ahead? You are restricting yourself by walking a certain distance.
There are plenty of accomodations.
I've never needed to and I walked during May and September.
