Let me make a bold guess. Looking at a sample page of the Cicerone Le Puy guidebook on the internet and then on the prices on the website of the corresponding establishments, for example
Les Capucins, I see that the first position is for a bed in a dormitory, the second position is for a room for 1 person, the third position is for a room for 2 persons, and the fourth position appears to be for more than two guests, presumably a family room for 4.
When I then look at the entry for the
youth hostel Pierre Cardinal, this would make sense as they only have dormitory beds, so the hyphens stands for empty space, ie for the price of categories of rooms that they don't offer.
The
Relais du Pèlerin has no hyphens at all, it is apparently donativo, hence their price for a bed is listed as
€Donation.
While the website of the
Accueil St-François informs that they have 19 beds in 13 rooms and their indicator €-/25/50/- makes sense, it's €25 for 1 pilgrim and €50 for a couple. They have no dormitory beds and no large rooms.
