Yes, there are a number of religious orders along le Voie de Tours. Some do welcome a dusty pilgrim. Here's where I stayed in 2014:
Tours : Basilique Saint Martin, Benedictine Sisters
Blois : Sœur Franciscaine : Maison Mère St Antoine. 15 Rue Monin 41000, Blois
